Rainbow Ice Cream Sandwiches

Ingredients You’ll Need



  • Plain flour

  • Good quality vanilla ice cream – the higher quality, the better your softened ice cream tray will re-freeze

  • 1 batch of vanilla sugar cookie dough

  • Rainbow colours – (americolour paste colours are used in the video)

Tools You’ll Need

  • Circle cutter (similar in size to your cookie roll)
  • 2 baking trays, 1 lined with baking paper
  • Rolling Pin
  • Sharp knife
  • Spatula

Here’s What To Do:



  • Spoon the vanilla ice cream into a baking tray. Smooth it down with a spatula until flat. Pop in freezer for 6-12 hours

  • Roll cookie dough until its tapered- fatter on one end. Cut it into several even pieces. Massage coloured paste or dye into each piece of the cookie dough- a mix of vibrant colours will work best. Massage each piece into a rectangular shape, cover in glad wrap and put in the fridge, except for the purple piece

  • Roll the purple piece into a long cylinder as long as your baking tray and chop off the ends. Lie in the middle of the baking tray. Put the tray in the freezer for about 20 minutes

  • Take the other pieces out of the fridge. Roll out your blue into some flour until its about 3 or 4mm thick. Take your frozen purple cylinder from the freezer and place it onto the blue flat piece. Using your fingers, wrap the blue around the purple cylinder. Pop this into the tray, then back into the freezer for about 20 minutes.
    Repeat this process with all of your coloured layers, saving the biggest for last. Freeze the one big cylinder for about 2 hours

  • Once it’s frozen, chop off jagged edges. Cut 3mm thick slices off the cylinder. PLace the slices on the baking trazy and into the oven for about 8-10 minutes. Allow them to completely cool

  • Use a cookie cutter to cut circles out of the ice cream. Put that circle f ice cream between 2 pieces of rainbow cookie. Voila!
